White Chocolate and Orange Cookies Recipe

        For one of our agent’s birthdays, I decided to make cookies to celebrate the occasion. After much debate, I chose to make white chocolate and orange cookies from a recipe I found in the 500 Cookies cookie compendium by Philippa Vanstone. As it turns out, they were a hit around the office. So, I thought I would share this simple recipe with you guys. Enjoy!

“White Chocolate & Orange Cookies”

½ cup (1 stick) sweet butter

1 cup superfine sugar

1 egg

Grated zest of 1 orange (2-3 tsp.)

1 tsp. vanilla extract

1 ½ cups all-purpose flour

½ tsp. baking soda

¼ tsp. baking powder

¼ tsp. salt

1 ½ cups (8 oz) white chocolate chips

Preheat the oven to 375 degrees F. Beat the butter and sugar. Add the egg, orange zest, and vanilla extract.

Sift together the dry ingredients. Stir the dry ingredients and chocolate chips into the butter mixture, and combine.

Roll into balls. Use your fingers to flatten onto a non-stick baking sheet 2 in. apart. Bake 8-10 minutes. Cool for 5 minutes.

When cool, store in an airtight container for up to 4-5 days.
